Preparation Method :
- Top and tail the pods and remove any strings if necessary.
 - Place the peas with salt and pepper to taste in a pan and pour over enough boiling water to barely cover.
 - Sprinkle with the spring onion (scallion), turn the heat down and simmer for 1 to 2 minutes, or until tender but still slightly crisp.
 - Drain the peas, toss with butter and season with extra salt, if required, and freshly ground pepper.

- 500 gram mange-tout peas
 - Salt and freshly ground pepper
 - 2 spring onion, finely chopped
 - Knob of butter
