MANGE-TOUT (SNOW PEAS)

20 minutes

Preparation Method :

  • Top and tail the pods and remove any strings if necessary.
  • Place the peas with salt and pepper to taste in a pan and pour over enough boiling water to barely cover.
  • Sprinkle with the spring onion (scallion), turn the heat down and simmer for 1 to 2 minutes, or until tender but still slightly crisp.
  • Drain the peas, toss with butter and season with extra salt, if required, and freshly ground pepper.

INGREDIENTS

  • 500 gram mange-tout peas
  • Salt and freshly ground pepper 
  • 2 spring onion, finely chopped
  • Knob of butter
