Preparation Method :
- Place a piece of wet greaseproof paper on the base of a steamer compartment.
 - Top with peas, spring onions, lettuce, mint, parsley, sugar, margarine and garlic.
 - Season well with salt and pepper. Cover with a tight-fitting lid and steam over boiling water for 1 hour.
 - Check the liquid level frequently and add more water if necessary.
 - After 1 hour, check that the peas are tender.

- 2 kg shelled fresh peas
 - Bunch of spring onions, trimmed and sliced
 - 16 Cos lettuce leaves, washed and shredded
 - 6 mint sprigs
 - 2 tablespoon chopped parsley
 - Pinch of caster sugar
 - 50 grams margarine
 - 2 clove garlic, peeled and crushed
 - Salt
 - Freshly ground black pepper
