CUCUMBER WITH FRESH PEAS AND MINT

Preparation Time :
20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Rinse the cucumber and cut it into matchsticks. Cut a piece of foil large enough to seal the vegetables.
  • Mix all ingredients together lightly. Pile on to the foil, season well with salt and pepper.
  • Seal completely and cook in a steamer over boiling water for 8 minutes.
  • Remove from the foil and garnish with sprigs of mint.

INGREDIENTS

  • 2 cucumbers
  • 200 grams shelled fresh or frozen peas
  • 2 teaspoon lemon juice
  • 2 teaspoon chopped mint
  • 2 teaspoon sugar
  • 50 grams margarine
  • Salt
  • Freshly ground black pepper
  • Mint Sprigs, to garnish
