CUCUMBER WITH FRESH PEAS AND MINT

Preparation Method :
- Rinse the cucumber and cut it into matchsticks. Cut a piece of foil large enough to seal the vegetables.
 - Mix all ingredients together lightly. Pile on to the foil, season well with salt and pepper.
 - Seal completely and cook in a steamer over boiling water for 8 minutes.
 - Remove from the foil and garnish with sprigs of mint.
 
INGREDIENTS
- 2 cucumbers
 - 200 grams shelled fresh or frozen peas
 - 2 teaspoon lemon juice
 - 2 teaspoon chopped mint
 - 2 teaspoon sugar
 - 50 grams margarine
 - Salt
 - Freshly ground black pepper
 - Mint Sprigs, to garnish
