POTATO PANCAKES

- Rinse the grated potatoes, and then place them on a tea (dish) towel and wring the towel to extract as much moisture as possible.
 - Place the potatoes in a bowl and stir in the eggs. Sift the flour and salt together and mix into the potatoes with the nutmeg.
 - Heat enough oil in a heavy frying pan (skillet) to give a depth of about 5 mm / ¼ inch. Place half the potato mixture in the hot oil, pressing into a flat pancake shape with the back of a fish slice.
 - Cook over a medium heat until brown and crisp on the bottom, then turn and brown the other side. Drain on kitchen paper towels while you cook the second pancake.

- 700 gram potatoes, grated
 - 4 eggs, lightly beaten
 - 2 tablespoon plain flour
 - 1 teaspoon salt
 - ½ teaspoon freshly grated nutmeg
 - Cooking oil for frying
