YELLOW SPLIT PEA AND WALNUT PUREE

Preparation Method :
- Put the peas in a saucepan with enough water to cover by 2.5 cm/1 inch. Bring to the boil then simmer, stirring occasionally, for 20 minutes until the liquid is absorbed and the peas are soft.
- Puree in a food processor with all the remaining ingredients until smooth, adding more lemon juice or salt and pepper.
- Transfer to a serving bowl and garnish with a few walnut pieces and chopped spring onion tops.
INGREDIENTS
- 200 grams yellow split peas, rinsed and drained
- 50 grams shelled walnuts, chopped roughly
- 150 ml fromage frais or Greek yogurt
- 2 garlic clove, crushed
- 4 spring onions, green part included, chopped
- 2 tablespoon lemon juice
- 2 tablespoon sesame oil
- Salt and pepper
- Walnut pieces and chopped spring onion tops, to garnish
