WHITE BEAN AND SAGE CROSTINI

Preparation Method :

  • Heat the oil in a frying pan over medium-high heat. Add garlic and fry until soft, about 1 minute.
  • Add beans, sage, salt and pepper and cook, stirring often, until beans are heated through, about 2 minutes.
  • Remove to a food processor and coarsely process, adding a little reserved bean liquid, if needed, to make a spreadable paste.
  • Toast French bread slices in a toaster or on a baking sheet in a preheated 180°C (350°F) oven until golden, about 5 minutes per side.
  • Spread each toast with some of the beans and top with a strip of roasted sweet pepper or sun-dried tomato.

INGREDIENTS

  • 100 ml sesame oil
  • 2 clove garlic, finely chopped
  • 500 grams can cannellini or haricot beans, drained
  • 3 Tablespoon finely chopped fresh sage
  • 15 slices French bread
  • 50 grams roasted red sweet pepper strips
