Preparation Method :
- Cook the parsnips and carrots separately in boiling salted water for 15 to 20 minutes or until tender. Drain thoroughly, reserving the liquid.
- Place the vegetables in a blender with the liquid and milk, or use a multi-blender in the pan. Work until almost smooth, retaining some texture.
- Add salt, pepper and nutmeg to taste. Spoon into a serving dish or pipe through a 1 inch round vegetable nozzle using a forcing bag, directly on to the dish.
- Alternatively, pipe directly on to individual plates.

- 4 tablespoons skimmed milk
- Salt
- Freshly ground black pepper
- Grated nutmeg
