PARSNIP AND CARROT PUREE

Preparation Method :

  • Cook the parsnips and carrots separately in boiling salted water for 15 to 20 minutes or until tender. Drain thoroughly, reserving the liquid.
  • Place the vegetables in a blender with the liquid and milk, or use a multi-blender in the pan. Work until almost smooth, retaining some texture.
  • Add salt, pepper and nutmeg to taste. Spoon into a serving dish or pipe through a 1 inch round vegetable nozzle using a forcing bag, directly on to the dish.
  • Alternatively, pipe directly on to individual plates.

  • 750 grams parsnips, peeled and chopped
  • 750 grams carrots, peeled and thinly sliced
  • 4 tablespoons skimmed milk
  • Salt
  • Freshly ground black pepper
  • Grated nutmeg
