LENTIL, MINT AND LEMON DIP

15 minutes

Preparation Method :

  • Drain the soaked lentils and rinse. Put them in a saucepan with water. Bring to the boil, then simmer for 5 minutes until soft. Drain again.
  • Put the lentils in a food processor with the remaining ingredients and process until smooth. Add more lemon juice, salt and pepper if necessary.
  • Transfer to a serving bowl and garnish with a twist of lemon and a mint sprig.

INGREDIENTS

  • 200 grams Puy lentils, soaked overnight
  • 2 teaspoon cumin seeds, toasted and crushed
  • 2 garlic clove, crushed
  • Grated zest of 1 lemon
  • 5 tablespoon lemon juice
  • 5 tablespoon sesame oil
  • 5 tablespoon finely chopped mint
  • Salt and pepper
