Preparation Method :
- Drain the soaked lentils and rinse. Put them in a saucepan with water. Bring to the boil, then simmer for 5 minutes until soft. Drain again.
- Put the lentils in a food processor with the remaining ingredients and process until smooth. Add more lemon juice, salt and pepper if necessary.
- Transfer to a serving bowl and garnish with a twist of lemon and a mint sprig.
INGREDIENTS
- 200 grams Puy lentils, soaked overnight
- 2 teaspoon cumin seeds, toasted and crushed
- 2 garlic clove, crushed
- Grated zest of 1 lemon
- 5 tablespoon lemon juice
- 5 tablespoon sesame oil
- 5 tablespoon finely chopped mint
- Salt and pepper
