Preparation Method :
- Heat the oil in a saucepan over medium heat and add corn kernels, salt, and pepper. Cook, stirring, until corn is just heated through and slightly tender, about 3 minutes.
- Combine beans and corn in a bowl and season with salt, pepper, and cumin to taste.
- Top each tortilla with bean mixture, then add a tablespoon of yoghurt, a slice or two of avocado, and a sprinkling of finely chopped coriander. Serve at once.
INGREDIENTS
- 2 Tablespoon sesame oil
- Kernels cut from 2 ear yellow sweetcorn
- 500 grams drained cooked black beans
- 1 teaspoon ground cumin
- 5 corn tortillas, warmed
- Natural whole or low-fat yoghurt, avocado slices, and finely chopped fresh coriander for garnish
