- Put all the ingredients for the marinade into a large jar and shake well.
- Add the mushrooms, pushing them down if necessary. Shake the jar once again so the mushrooms are coaled with the marinade.
- Stand the jar in a cool place and leave for 24 hours, shaking occasionally so that the mushrooms soften. They will reduce in bulk considerably during this time and also produce quite an amount of liquid.
- Serve them chilled with fresh whole meal rolls.

- 1 kg button mushrooms, trimmed and sliced
Marinade
- 2 tablespoon cider vinegar
- 2 tablespoon Cooking oil
- 2 tablespoon lemon juice
- Few drops of Worcestershire sauce
- 4 tablespoons tomato puree
- 4 tablespoons cold water
- 2 tablespoon chopped fresh mixed herbs
- 2 small onion, peeled and grated
- 2 clove garlic, peeled and crushed
