- Heat the oil in a large pan. Add the onion, carrot and celery and fry gently for 3 minutes, stirring occasionally. Add the crushed garlic and fry for a further 1 minute.
- Stir in the white wine, tomatoes, parsley, the thyme, bay leaf, and salt and pepper to taste.
- Bring to the boil, then lower the heat and add the mushrooms. Simmer for 10 minutes.
- Leave to cool, then pour into a serving dish and chill in the refrigerator.
- Sprinkle with the remaining parsley and serve chilled.

- 2 large onion, peeled and sliced

- 2 large clove garlic, peeled and crushed
- 300 ml dry while wine
- 6 tomatoes, skinned, quartered and deseeded
- 6 tablespoons chopped parsley
- 2 tablespoon thyme leaves
- 2 bay leaves
- Salt
- Freshly ground black pepper
- 1 kilogram button mushrooms, wiped and trimmed
