SPICED CAULIFLOWER, PEAS AND POTATOES

Preparation Method :
- Cut potatoes into 2cm pieces.
- Boil, steam or microwave potatoes and cauliflower separately until almost tender; drain.
- Heat oil in pan, add onion, garlic, ginger and chilies, cook, stirring, until onion is soft.
- Add seeds and turmeric, cook, stirring, until fragrant.
- Stir in potatoes, cauliflower, peas and milk, cook, stirring, until heated through.
- Sprinkle with coriander.
INGREDIENTS
- 500 grams potatoes, peeled
- 500 grams cauliflower, chopped
- 1 tablespoon Peanut oil
- 150 grams onion, sliced
- 1 clove garlic, crushed
- 1 teaspoon grated fresh ginger
- 2 small fresh red chilies, seeded, chopped
- 3 teaspoons black mustard seeds
- 2 teaspoons cumin seeds
- ½ teaspoon ground turmeric
- 200 grams frozen peas
- 150 ml coconut milk
- 1 tablespoon chopped fresh coriander
