Preparation Method :
- Cut the cauliflower into florets, the peeled onions into quarters or eighths depending on size, the leeks and fennel into slices.
- Place all the vegetables in a saucepan with the white wine, vinegar, spices, rosemary and salt.
- Add enough water to cover, bring to the boil and simmer gently for 15 to 20 minutes.
- The vegetables should be slightly crisp.

- 2 teaspoon ground coriander
- 2 teaspoon ground mace
- 2 teaspoon dried rosemary
