NEST OF BABY VEGETABLES

Preparation Method :

  • Fold 8 sheets of greaseproof paper in half, and cut a semi-circle of 6 inch radius through each so that, when opened out, you have 12 inch rounds of paper.
  • Place the circles together in pairs so that you have 4 double-thick circles.
  • Divide all of the ingredients between the 4 circles, arranging the food on one half of each circle only, and season well with salt and pepper.
  • Fold the free half over to make a parcel rather like an apple turnover.
  • Fold the edges of the layers of paper over twice together, twisting and pressing hard to make an air-tight seal.
  • Lay the parcels inside a steamer. Cover with a tight-fitting lid and steam over boiling water for 8 to 10 minutes.

INGREDIENTS

  • 20 baby carrots, washed
  • 20 baby turnips, washed
  • 100 grams mange tout, topped and tailed
  • 200 grams French beans, topped and tailed
  • 15 button onions, peeled
  • 15 radishes, washed
  • 100 grams margarine
  • 8 tablespoons white wine
  • 6 strips lemon peel
  • 8 teaspoons chopped fresh herbs
  • Salt
  • Freshly ground black pepper
