Preparation Method :
- Fold 8 sheets of greaseproof paper in half, and cut a semi-circle of 6 inch radius through each so that, when opened out, you have 12 inch rounds of paper.
- Place the circles together in pairs so that you have 4 double-thick circles.
- Divide all of the ingredients between the 4 circles, arranging the food on one half of each circle only, and season well with salt and pepper.
- Fold the free half over to make a parcel rather like an apple turnover.
- Fold the edges of the layers of paper over twice together, twisting and pressing hard to make an air-tight seal.
- Lay the parcels inside a steamer. Cover with a tight-fitting lid and steam over boiling water for 8 to 10 minutes.

- 20 baby turnips, washed
- 100 grams mange tout, topped and tailed
- 200 grams French beans, topped and tailed
- 15 button onions, peeled
- 15 radishes, washed
- 100 grams margarine
- 8 tablespoons white wine
- 6 strips lemon peel
- 8 teaspoons chopped fresh herbs
- Salt
- Freshly ground black pepper
