Preparation Method :
- Place whole eggplant on oven tray, bake, uncovered, in hot oven about 1 hour or until soft; cool 10 minutes.
- Peel and chop eggplant.
- Heat oil in pan, add onion, garlic, cumin and ground coriander, cook, stirring, until onion is soft.
- Add Sweet potatoes, potato, carrot and stock, simmer, covered, about 30 minutes or until vegetables are soft.
- Blend or process eggplant, potato mixture, chili and fresh coriander until smooth.

- 300 grams eggplant
- 2 tablespoons Peanut oil
- 150 grams onion, chopped
- 1 clove garlic, crushed
- 1 teaspoon ground cumin
- 12 teaspoon ground coriander
- 500 grams Sweet potatoes, peeled, chopped
- 300 grams potato, peeled, chopped
- 200 grams carrot, chopped
- 200 ml chicken stock
- 1 small red chili, seeded, finely chopped
- 1 tablespoon chopped fresh coriander
