MIXED VEGETABLE PUREE

1 1/2 hour

Preparation Method :

  • Place whole eggplant on oven tray, bake, uncovered, in hot oven about 1 hour or until soft; cool 10 minutes.
  • Peel and chop eggplant.
  • Heat oil in pan, add onion, garlic, cumin and ground coriander, cook, stirring, until onion is soft.
  • Add Sweet potatoes, potato, carrot and stock, simmer, covered, about 30 minutes or until vegetables are soft.
  • Blend or process eggplant, potato mixture, chili and fresh coriander until smooth.

INGREDIENTS

  • 300 grams eggplant
  • 2 tablespoons Peanut oil
  • 150 grams onion, chopped
  • 1 clove garlic, crushed
  • 1 teaspoon ground cumin
  • 12 teaspoon ground coriander
  • 500 grams Sweet potatoes, peeled, chopped
  • 300 grams potato, peeled, chopped
  • 200 grams carrot, chopped
  • 200 ml chicken stock
  • 1 small red chili, seeded, finely chopped
  • 1 tablespoon chopped fresh coriander
