Preparation Method :
- Heat the oil and sauté the onion for 3 minutes.
 - Add the garlic and courgettes and cook for 5 minutes with the lid on; toss occasionally.
 - Add the vinegar, tomato puree, water, sugar, thyme, salt and pepper.
 - Stir, bring to the boil, cover and simmer for 15 minutes. Transfer to a serving dish.
 - Serve hot or cold.

- 4 tablespoons Cooking oil
 - 2 onion, peeled and sliced
 - 4 cloves garlic, peeled and crushed
 - 1 kg courgettes, peeled and sliced
 - 2 tablespoon wine vinegar
 - 4 tablespoons tomato puree
 - 10 tablespoons water
 - 4 teaspoons brown sugar
 - 2 teaspoon dried thyme
 - Salt
 - Freshly ground black pepper
