Preparation Method :
- Sauté the onion and garlic in the oil in a frying pan.
 - Season with salt and pepper to taste and add the herbs. Cut the beans into lengths, and the courgettes into chunks.
 - Add the beans, courgettes, tomatoes and water to the pan and simmer, covered, for 10 minutes or until just tender.
 - Serve at once.
 
INGREDIENTS
- 2 large onion, peeled and sliced
 - 2 clove garlic, peeled and crushed
 - Pinch of salt
 - Freshly ground black pepper
 - 6 tablespoons chopped parsley
 - 2 teaspoon chopped thyme or sage
 - 750 grams French beans
 - 750 grams courgettes
 - 8 large tomatoes, quartered
 - 8 tablespoons water
