BUTTERED COURGETTES (ZUCCHINI)

Preparation Method :
- Wash and trim but do not peel the courgettes (zucchini). Grate the courgettes (zucchini).
 - Toss with a little salt and leave for 30 minutes in a colander or sieve to drain, then rinse under cold water.
 - Fold the watercress or lettuce through the courgettes (zucchini).
 - Melt the butter in a pan and, when it is foaming, put in the vegetables and toss with two forks over a medium heat.
 - When very hot, season with salt, pepper and nutmeg to taste.
 - Serve immediately.

- 500 gram courgettes
 - Salt
 - 50 gram watercress or lettuce, shredded
 - 50 gram butter
 - Freshly ground pepper
 - Freshly grated nutmeg
