SPICED CAULIFLOWER

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Heat the oil in a pan, add the spices and fry gently for 1 minute.
  • Add the vegetables and cook gently for a further 3 minutes, stirring occasionally.
  • Add the stock, and salt and pepper to taste.
  • Cover and simmer for 10 minutes until the vegetables are just tender.
  • Stir in the yogurt, sprinkle with the coriander and parsley.
  • Serve immediately while hot.

INGREDIENTS

  • 4 tablespoons Cooking oil
  • 2 teaspoon ground ginger
  • 4 teaspoons ground coriander
  • 2 teaspoon ground turmeric
  • 2 cauliflowers, broken into florets
  • 4 carrots, peeled and thinly sliced
  • 2 onion, peeled and sliced
  • 4 celery stalks, sliced
  • 250 ml stock
  • Salt
  • Freshly ground black pepper
  • 250 ml plain low-fat yogurt

Garnish

  • 4 teaspoons chopped coriander
  • 4 teaspoons chopped parsley
