SPICED CAULIFLOWER

                    Preparation Method :
- Heat the oil in a pan, add the spices and fry gently for 1 minute.
 - Add the vegetables and cook gently for a further 3 minutes, stirring occasionally.
 - Add the stock, and salt and pepper to taste.
 - Cover and simmer for 10 minutes until the vegetables are just tender.
 - Stir in the yogurt, sprinkle with the coriander and parsley.
 - Serve immediately while hot.
 
INGREDIENTS
- 4 tablespoons Cooking oil
 - 2 teaspoon ground ginger
 - 4 teaspoons ground coriander
 - 2 teaspoon ground turmeric
 - 2 cauliflowers, broken into florets
 - 4 carrots, peeled and thinly sliced
 - 2 onion, peeled and sliced
 - 4 celery stalks, sliced
 - 250 ml stock
 - Salt
 - Freshly ground black pepper
 - 250 ml plain low-fat yogurt
 
Garnish
- 4 teaspoons chopped coriander
 - 4 teaspoons chopped parsley
