RED CABBAGE

Cooking Time :
1 hour 10 minutes

Preparation Method :

  • Put the cabbage, onion and apple in a non-metal ovenproof casserole.
  • Add the sugar, cloves, salt and pepper to taste, chicken stock and vinegar and mix well.
  • Cover with a lid or buttered aluminium foil and bake in a moderate oven (180°C/350°F, Gas Mark 4) for 45 minutes to 1 hour or until the cabbage is very tender.
  • Serve immediately, or leave to cool, then chill before serving.
  • Garnished with parsley.

INGREDIENTS

  • 1 kg red cabbage, washed, trimmed and finely sliced
  • 2 medium onion, peeled and thinly sliced
  • 2 medium cooking apple, peeled, cored and chopped
  • 4 teaspoons sugar
  • 4 cloves
  • Salt
  • Freshly ground pepper
  • 6 tablespoons chicken stock
  • 3 tablespoons wine or cider vinegar
  • Chopped parsley, to garnish
