RED CABBAGE

Preparation Method :
- Put the cabbage, onion and apple in a non-metal ovenproof casserole.
 - Add the sugar, cloves, salt and pepper to taste, chicken stock and vinegar and mix well.
 - Cover with a lid or buttered aluminium foil and bake in a moderate oven (180°C/350°F, Gas Mark 4) for 45 minutes to 1 hour or until the cabbage is very tender.
 - Serve immediately, or leave to cool, then chill before serving.
 - Garnished with parsley.
 
INGREDIENTS
- 1 kg red cabbage, washed, trimmed and finely sliced
 - 2 medium onion, peeled and thinly sliced
 - 2 medium cooking apple, peeled, cored and chopped
 - 4 teaspoons sugar
 - 4 cloves
 - Salt
 - Freshly ground pepper
 - 6 tablespoons chicken stock
 - 3 tablespoons wine or cider vinegar
 - Chopped parsley, to garnish
