MEXICAN-STYLE CAULIFLOWER

Preparation Method :

  • Trim the cauliflower and divide into florets. Cook the florets, covered, in a small amount of boiling salted water until just tender. Drain.
  • Mix the tomatoes, parsley, cloves, cinnamon, capers and olives and heat gently to make a sauce.
  • Pour a little of the sauce into an ovenproof serving dish, add the cauliflower and cover with the remaining sauce.
  • Sprinkle with the cheese, breadcrumbs and oil and bake until brown in a preheated hot oven for about 20 minutes.
  • Serve hot.

INGREDIENTS

  • 2 medium cauliflowers
  • 6 tomatoes, skinned, deseeded and chopped
  • 4 tablespoons chopped parsley
  • Pinch of dried cloves
  • 1 teaspoon ground cinnamon
  • 2 tablespoon capers
  • 4 tablespoons chopped olives
  • 5 tablespoons grated cheese
  • 4 tablespoons fine breadcrumbs
  • 2 tablespoon Cooking oil
