CURRIED CAULIFLOWER

Cauliflower is one of the vegetables most commonly used in Indian cooking. Potatoes may be substituted in this recipe.

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil until very hot and add the mustard seeds, ginger, cumin seeds and onion.
  • Cook for 2 minutes, stirring constantly. Add the turmeric and continue cooking for 5 minutes.
  • Add the cauliflower and stir until the florets are coated with the mixture.
  • Add the remaining ingredients, with a little water if necessary, reduce the heat, and cook until the cauliflower is tender but firm.

INGREDIENTS

  • 2 tablespoon IDHAYAM Sesame oil
  • ½ teaspoon mustard seeds
  • 1 tablespoon fresh ginger, finely chopped
  • ¼ teaspoon cumin seeds
  • 2 medium onions, finely chopped
  • ½ teaspoon turmeric
  • 1 cauliflower, divided into florets
  • 2 tomatoes, peeled and chopped
  • ½ teaspoon sugar
  • 4 green chillies, finely chopped
  • Salt to taste
