CAULIFLOWER WITH CREAM SAUCE

20 minutes

Preparation Method :

  • Trim off the outside green leaves and wash the cauliflower.
  • Place stalk side down in boiling salted water, cover and simmer for 15 minutes, or until just tender when tested with a skewer - be sure not to overcook. Drain and place in a heated serving bowl.
  • To make the sauce, heat the sour cream and softened cream cheese over a gentle heat, stirring, until combined.
  • Add the lemon juice, spring onions (scallions) and salt and pepper to taste and bring to near boiling, then pour over the cauliflower.

INGREDIENTS

  • 2 small cauliflowers    
  • Salt and freshly ground pepper    
  • 300 ml soured cream    
  • 100 gram cream cheese, softened    
  • 4 tablespoons lemon juice
  • 4 spring onions, finely chopped
