CAULIFLOWER WITH CREAM SAUCE

Preparation Method :
- Trim off the outside green leaves and wash the cauliflower.
 - Place stalk side down in boiling salted water, cover and simmer for 15 minutes, or until just tender when tested with a skewer - be sure not to overcook. Drain and place in a heated serving bowl.
 - To make the sauce, heat the sour cream and softened cream cheese over a gentle heat, stirring, until combined.
 - Add the lemon juice, spring onions (scallions) and salt and pepper to taste and bring to near boiling, then pour over the cauliflower.

- 2 small cauliflowers
 - Salt and freshly ground pepper
 - 300 ml soured cream
 - 100 gram cream cheese, softened
 - 4 tablespoons lemon juice
 - 4 spring onions, finely chopped
