BAKED SPICED CAULIFLOWER

Preparation Method :
- Preheat the oven to 200°C. Mix the oil with the spices, hazelnuts and seasoning and rub the mix all over the chopped cauliflower.
- Place in a shallow roasting tin. Roast for 20 minutes, or until the pieces are tender in the centre and browned on top.
- Meanwhile, mix the yoghurt with the shallots and coriander and spoon it into a bowl.
- Heat the oil in a pan and fry the capers until they wilt. Pour it over the yoghurt.
- Serve with the baked cauliflower.
INGREDIENTS
- 5 Cauliflowers, stems trimmed and cut into florets
- 10 tablespoon Hazelnuts, toasted and finely chopped
- 10 tablespoon Sesame oil
- 5 teaspoon Cumin seeds
- 3 teaspoon Coriander seeds
- 3 teaspoon Garam masala powder
- Salt and pepper to taste
The Caper Raita
- 1 litre yoghurt
- 4 finely chopped Shallots
- A small bunch Coriander, finely chopped
- 3 tablespoon Sesame oil
- 10 tablespoon Capers, rinsed and drained
