Preparation Method :
- Put the leeks in a deep pan. Add the tomatoes with their juice, the chopped basil and the garlic.
- Season to taste with salt and pepper, Bring to the boil, lower the heat and cover.
- Simmer tor about 20 minutes, or until the leeks are tender, stirring occasionally.
- Sprinkle over the chopped parsley.

- 12 leeks, trimmed and cleaned
- 400 grams tomatoes, chopped
- 2 teaspoon chopped basil
- 2 clove garlic, peeled and crushed
- Salt
- Freshly ground black pepper
- Chopped parsley, to garnish
