LEEKS NICOISE

Preparation Method :

  • Put the leeks in a deep pan. Add the tomatoes with their juice, the chopped basil and the garlic.
  • Season to taste with salt and pepper, Bring to the boil, lower the heat and cover.
  • Simmer tor about 20 minutes, or until the leeks are tender, stirring occasionally.
  • Sprinkle over the chopped parsley.

INGREDIENTS

  • 12 leeks, trimmed and cleaned
  • 400 grams tomatoes, chopped
  • 2 teaspoon chopped basil
  • 2 clove garlic, peeled and crushed
  • Salt
  • Freshly ground black pepper
  • Chopped parsley, to garnish
