LEEK AND POTATO ROAST

Preparation Method :
- Cut potatoes into large chunks.
 - Boil, steam or microwave potatoes until just tender; drain.
 - Heat oil in pan, add garlic and bacon, cook, stirring, until bacon is crisp.
 - Add leeks, cook, stirring, until leeks are soft; drain on absorbent paper.
 - Add extra oil to pan, add potatoes, cook, stirring occasionally, until potatoes are browned and tender.
 - Add bacon and leek mixture and pepper, cook, stirring, until heated through.
 
INGREDIENTS
- 1 kg old potatoes, peeled
 - 1 tablespoon Peanut oil
 - 2 cloves garlic, crushed
 - 4 bacon rashers, chopped
 - 750 grams leeks, sliced
 - 2 tablespoons Peanut oil, extra
 - 1 teaspoon seasoned pepper
