LEEK AND POTATO ROAST

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut potatoes into large chunks.
  • Boil, steam or microwave potatoes until just tender; drain.
  • Heat oil in pan, add garlic and bacon, cook, stirring, until bacon is crisp.
  • Add leeks, cook, stirring, until leeks are soft; drain on absorbent paper.
  • Add extra oil to pan, add potatoes, cook, stirring occasionally, until potatoes are browned and tender.
  • Add bacon and leek mixture and pepper, cook, stirring, until heated through.

 

INGREDIENTS

  • 1 kg old potatoes, peeled
  • 1 tablespoon Peanut oil
  • 2 cloves garlic, crushed
  • 4 bacon rashers, chopped
  • 750 grams leeks, sliced
  • 2 tablespoons Peanut oil, extra
  • 1 teaspoon seasoned pepper
