Preparation Method :
- Top and tail the beans and string if necessary. Cut the beans into 4 cm/ 1 ½ inch lengths. Combine the garlic, lemon juice, salt and cayenne.
- Heat the oil in a frying pan, add the crushed cumin or coriander seeds and fry for a few seconds. Add the beans and sauté briskly for 1 minute.
- Stir in the garlic mixture, cover tightly, and cook over a low heat for 10 minutes or until just tender. Increase the heat, remove the cover and stir constantly until the liquid has evaporated.
- Serve immediately.
