Preparation Method :
- Heat the oil in a large non-stick frying-pan. Add the onion, chili and garlic and fry for 2 minutes or until softened.
- Add the cumin, coriander and paprika and continue to cook for 1 minute.
- Stir in the beans and tomatoes and heat through.
- Transfer to a blender and blend until almost smooth, but still retaining a little texture.
- Stir in the coriander and serve.

- 420 grams black-eyed beans, drained and rinsed
- 1 red chili, chopped
- 1 garlic clove, crushed
- 2 teaspoon Cooking oil
- 1 teaspoon ground cumin
- 1 onion, chopped
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 2 tomatoes, chopped
- 2 tablespoons chopped fresh coriander
- Salt and freshly ground black pepper, to taste
