Preparation Method :
- Top and tail the beans, remove the strings, and thinly slice diagonally.
- Toss the beans in hot butter, and then add the lemon juice, salt and pepper to taste, and enough vegetable stock to cover.
- Simmer the beans gently for about 8 minutes until they are almost tender, then boil rapidly and reduce the liquid to a sauce.
- Serve topped with the soured cream and a sprinkling of paprika.
INGREDIENTS
- 500 gram whole green beans
- 100 gram butter, melted
- 2 teaspoon lemon juice
- 300 ml boiling vegetable stock
- 4 tablespoons soured cream
- Sweet paprika powder
