BEANS WITH POULETTE SAUCE

Preparation Method :
- Top and tail the beans, and cook in boiling salted water until tender.
- Meanwhile make the sauce: melt the butter in a small pan. Stir in the flour, cook for 1 minute, and then gradually blend in the stock.
- Bring the sauce to the boil, stirring constantly. Add salt and pepper to taste and the herbs. Reduce the heat and simmer the sauce for 5 minutes.
- Beat the egg yolk with the lemon juice. Remove the sauce from the heat, stir in the egg mixture and reheat without boiling.
- Drain the beans, arrange in a heated serving dish and pour the sauce over.
- Serve immediately.

- 500 gram green beans
- Salt and freshly ground pepper
- 30 gram butter
- 2 teaspoon plain flour
- 250 ml chicken stock or marjoram
- 2 egg yolk
- 2 tablespoon lemon juice
