Preparation Method :
- Top and tail the beans and cut in half if very long; leave whole if the beans are small and young.
- Heat the oil in a large pan and gently fry the onion and garlic until they soften and turn a pale golden color.
- Place the beans on top of the onions, then the tomato and half the parsley. Sprinkle with the oregano, salt and pepper to taste and sugar.
- Cover the pan tightly and simmer over a gentle heat for about 20 minutes until the beans are tender.
- Check the liquid from time to time, and add a little water if it seems to be evaporating too much. You should have a thick sauce at the end of the cooking time.
- Stir in the cumin and sprinkle with the remaining parsley.
- Serve hot or allow to cool, then cover and chill.

- 8 tablespoons Cooking oil
- 2 medium onion, thinly sliced
- 2 clove garlic, crushed
- 2 large ripe tomato, skinned and chopped
- 4 tablespoons chopped parsley
- 2 teaspoon chopped fresh or
- 1 teaspoon dried oregano
- Salt and freshly ground pepper
- 1 teaspoon sugar
- 2 teaspoon ground cumin
