BEANS GREEK STYLE

Preparation Method :

  • Top and tail the beans and cut in half if very long; leave whole if the beans are small and young.
  • Heat the oil in a large pan and gently fry the onion and garlic until they soften and turn a pale golden color.
  • Place the beans on top of the onions, then the tomato and half the parsley. Sprinkle with the oregano, salt and pepper to taste and sugar.
  • Cover the pan tightly and simmer over a gentle heat for about 20 minutes until the beans are tender.
  • Check the liquid from time to time, and add a little water if it seems to be evaporating too much. You should have a thick sauce at the end of the cooking time.
  • Stir in the cumin and sprinkle with the remaining parsley.
  • Serve hot or allow to cool, then cover and chill.

INGREDIENTS

  • 1 kg green beans
  • 8 tablespoons Cooking oil
  • 2 medium onion, thinly sliced
  • 2 clove garlic, crushed
  • 2 large ripe tomato, skinned and chopped
  • 4 tablespoons chopped parsley
  • 2 teaspoon chopped fresh or
  • 1 teaspoon dried oregano
  • Salt and freshly ground pepper
  • 1 teaspoon sugar
  • 2 teaspoon ground cumin
