VEGETABLE AU GRATIN

Preparation Method :

For white sauce

  • Saute the maida in the butter till light brown.
  • Gradually pour in the milk and keep stirring till it thickens to a sauce consistency. Make sure there are no lumps.
  • Add the spices and salt, and mix.

For vegetables

  • Saute all the vegetables except spinach in the butter till done.
  • Add the chopped spinach leaves and cook for 2 minutes.
  • Season with salt and pepper.

Assembling

  • Mix in the vegetables into the white sauce.
  • Transfer them to a baking bowl, top with grated cheese and bread crumbs.
  • Grill it in an oven for 14 minutes or till the top layer turns golden brown.
  • Garnish with olives. Serve hot. 

INGREDIENTS

For the white sauce

  • 320 ml milk
  • 2 tablespoon maida
  • 2 teaspoon butter
  • A pinch of nutmeg powder
  • 1 teaspoon oregano
  • Salt and pepper to taste

For the vegetables

  • 2 tablespoon onion, finely chopped
  • 2 tablespoon garlic, finely chopped
  • 2 tablespoon capsicum, finely chopped
  • 2 tablespoon zucchini, finely chopped
  • 2 tablespoon spinach, finely chopped
  • 2 tablespoon baby corn, finely chopped
  • 2 teaspoon butter
  • 10 black olives
  • 200 grams cheese
  • 1 tablespoon bread crumbs
  • Salt and pepper to taste
