POTATO GRATIN WITH SWEET POTATOES

Preparation Method :
- Grease 23 cm square slab cake pan Place garlic on oven tray, bake in moderately hot oven about 50 minutes or until garlic is very soft.
- Cool 10 minutes, cut in half, squeeze out garlic; mash.
- Cut potatoes and Sweet potatoes into 3 mm slices.
- Layer half the potatoes in prepared pan, sprinkle with some of the combined cheese and thyme.
- Top with all the Sweet potatoes, sprinkle with more cheese and thyme.
- Add remaining potato, sprinkle with remaining cheese and thyme.
- Pour over combined cream and garlic.
- Bake, uncovered, in moderately hot oven about 1 ½ hours or until potatoes are tender and top is well browned.
- Every 30 minutes, press potatoes down into cream mixture with an egg slice.

- 1.5 kg old potatoes, peeled
- 1 kg Sweet potatoes, peeled
- 100 grams grated parmesan cheese
- 2 tablespoons chopped fresh thyme
- 300ml cream
