BOSTON-STYLE BAKED BEANS

40 minutes

Preparation Method :

  • Pre heat the oven to 200°C / 400°F / Gas Mark 6.
  • Mix the Onion mixture with the mixed pulses and cook for about 3-5 minutes.
  • Stir in the egg mixture followed by the meal mixture and stir just enough to combine.
  • Pour into a greased 9 inch square cake tin. Sprinkle over the remaining thyme.
  • Bake for about 25-30 minutes or until golden and risen.
  • Check by inserting a toothpick into the centre, if it comes out clean it is done.
  • Cut into squares and reheat the beans. Adjust seasoning to taste with salt and pepper.
  • Garnish with parsley sprigs and serve hot.

INGREDIENTS

  • 400 grams mixed dried pulses, washed, soaked, drained, cooked, drained and reserve the cooking liquid
  • Salt and freshly ground black pepper
  • Parsley sprigs and freshly chopped thyme to garnish

Mix Together - Onion Mixture

  • 1 onion, peeled and finely chopped
  • 100 grams black molasses or treacle
  • 2 tablespoon Dijon mustard
  • 2 tablespoon light brown soft sugar

Meal Mixture

  • 100 grams plain flour
  • 125 grams fine cornmeal
  • 2 tablespoon castor sugar
  • 2 teaspoon baking powder
  • 1 tablespoon freshly chopped thyme
  • Salt, to taste

Egg Mixture

  • 2 medium eggs
  • 200 ml milk
  • 2 tablespoon melted butter
