Preparation Method :
- Preheat the oven.
- Halve the aubergines lengthwise and sprinkle with a little salt and mace.
- Cut 4 pieces of foil each large enough to contain an aubergine half.
- Lightly brush each aubergine half with oil and wrap in the foil. Bake in the oven for 20 to 30 minutes, or until tender.
- Meanwhile, to make the dressing, mix together the yogurt, olive oil, orange juice, mace and salt and pepper.
- Unwrap the aubergines and place on a serving dish. Pour the dressing over the hot aubergine halves, sprinkle with orange rind as a garnish.
- Serve immediately.
INGREDIENTS
- 4 large aubergines

- 4 teaspoons Cooking oil
- Shredded rind of 2 orange, to garnish
Dressing
- 500 ml plain low-fat yogurt
- 4 teaspoons olive oil
- 4 teaspoons fresh unsweetened orange juice
- Pinch of ground mace
- Salt
- Freshly ground black pepper
