Preparation Method :
- Cut each aubergine diagonally into 3 pieces and place in a steamer. Cover and steam over simmering water for about 10 - 20 minutes or until tender.
 - To Make Dressing: Mix all the ingredients into a large bowl, except aubergines.
 - Add aubergines to dressing, toss until well coated, transfer to salad dish and serve.
 
INGREDIENTS
- 1 kg baby aubergines
 
Hot Pepper Dressing
- 2 teaspoon sesame oil
 - 1 teaspoon hot pepper oil
 - 50 ml soy sauce
 - 1 tablespoon rice wine
 - 1 tablespoon rice wine vinegar
 - 3 cloves garlic, chopped
 - 2 spring onions, chopped
 - 1 teaspoon sugar
