ORIENTAL STEAMED AUBERGINES

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Cut each aubergine diagonally into 3 pieces and place in a steamer. Cover and steam over simmering water for about 10 - 20 minutes or until tender.
  • To Make Dressing: Mix all the ingredients into a large bowl, except aubergines.
  • Add aubergines to dressing, toss until well coated, transfer to salad dish and serve.

INGREDIENTS

  • 1 kg baby aubergines

Hot Pepper Dressing

  • 2 teaspoon sesame oil
  • 1 teaspoon hot pepper oil
  • 50 ml soy sauce
  • 1 tablespoon rice wine
  • 1 tablespoon rice wine vinegar
  • 3 cloves garlic, chopped
  • 2 spring onions, chopped
  • 1 teaspoon sugar
