SALMON IN RED WINE
The Salmon in Red Wine is perfect to include in your menu, most especially in your diet plan. This dish is mainly made of salmon with some healthy ingredients. You can prepare it for about one hour and can serve for eight people.

Preparation Method :
- Rinse the salmon quickly in cold water, then pat dry with kitchen paper.
- Melt the margarine in a large flame- proof dish into which the salmon will fit snugly.
- Add the shallots and sweat for 2 minutes, then put in the steaks and brown for 1 minute on each side- over a high heat.
- Sprinkle over the remaining ingredients; cover with greased paper and cook in the oven for 15 minutes until the steaks are just done.
- Pour off the cooking juices into a small sauce-pan. Meanwhile, keep the salmon warm.
- Cut the rest of the margarine into small pieces and whisk into the pan, one piece at a time, constantly beating until each piece is absorbed.
- Stop when the sauce is smooth and glossy. Pour immediately over the salmon.
- Garnish and serve.
INGREDIENTS
- 10 salmon steaks, about 1 inch thick
- 200 grams margarine
- 10 shallots, finely chopped
- Small bunch fresh parsley, finely chopped
- 2 clove garlic, peeled and finely chopped
- 10 black peppercorns, crushed
- Maldon or sea salt
- 500 ml red wine
- Parsley sprig, to garnish
