MELT-IN-THE-MOUTH STEAKS

Preparation Method :
- Put the steaks in a bowl with bay leaf and cloves, 2 cloves garlic cut into slivers, and the oil. Leave to marinate for 8 hours or overnight.
- The next day, remove the steaks, strain and reserve the marinade. Place half the onions in the bottom of a flameproof casserole with 1 clove garlic, chopped.
- Put steaks on top, sprinkle with salt, pepper, vinegar, then cover with remaining onions and the final garlic clove, chopped.
- Cover the casserole with a concave lid or a deep ovenproof plate and fill this with water. The casserole should be simmered over very gentle heat for 1½ hours and should not be uncovered during this time.
- Keep the lid or plate topped up with water as it evaporates during cooking.
- Remove steaks and place on warmed plates. Keep hot. Add the capers to the casserole with the flour.
- Cook for 1 minute, stirring, then gradually stir in the stock. Taste and adjust seasoning and cook, stirring, until thick.
- Pour over the steaks, sprinkle with reserved marinade.
- Serve immediately with Glazed Carrots and New Potatoes.

- 4 rump steaks
- 2 bay leaf, crushed
- 4 cloves, lightly crushed
- 8 cloves garlic, peeled
- 10 tablespoons oil
- 4 onions, peeled and sliced into rings
- Salt
- Freshly ground black pepper
- 8 tablespoons red wine vinegar
- 4 tablespoons capers, drained and finely chopped
- 2 tablespoon plain flour
- 500 ml hot beef stock
