JUGGED STEAK
Find an ideal taste of meat recipe with judge steak. This dish is packed with beef stock, red wine, fresh mint, sausage meat and other seasonings. With its tasty ingredients, the dish appears more delectable and it can never resist by every taster.

Preparation Method :
- Preheat the oven to Gas Mark 3/170°C/325°F.
- Toss the steak in the seasoned flour.
- Heat the butter and oil in a flameproof casserole, and brown the steak.
- Add the shallots and season.
- Add the wine and beef stock, stir and cover it with a lid or cooking foil. Bake in the centre of the oven for 3 hours.
- Blend the Cumberland sausage meat in a bowl with the mint and breadcrumbs, forming the mixture into 10 equal sized small balls.
- About 30 minutes before the end of the cooking time, add the sausage balls and the blackcurrant jelly.
- Return the casserole to the oven, uncovered, to finish cooking.
- Just before serving, garnish with the blackcurrants and a sprig of fresh mint.
INGREDIENTS
- 750 grams stewing steak cut into 2.5cm cubes
- 50 grams flour, seasoned
- 50 grams butter
- 2 tablespoons olive oil
- 500 grams shallots, peeled and sliced
- Salt and freshly ground black pepper (to taste)
- 150 ml red wine
- 500 ml Basic Beef Stock
- 250 grams of Cumberland sausage meat
- 1 teaspoon chopped fresh mint
- 100 grams fresh breadcrumbs
- 2 tablespoons blackcurrant jelly
- 75 grams fresh blackcurrants, washed and stalks removed
- A sprig of fresh mint
