- Cut the steak into fine strips about 5 cm/2 inches long. Heat the oil in a wok or heavy-based frying pan, add almonds and stir-fry until golden all over.
- Add the beef and cook, stirring, for 5 minutes. Add beans and boiling water cover and cook for 5 minutes.
- Add spring onions (scallions) and stir in soy sauce mixed with corn flour.
- Add salt and pepper to taste and cook, stirring, for 3 minutes.
- Serve with noodles or plain boiled rice.

- 700 grams rump steak
- 8 tablespoons cooking oil
- 50 grams whole shelled almonds
- 500 grams sliced green beans
- 500 ml boiling water
- 8 spring onions, chopped
- 2 tablespoon soy sauce
- 4 teaspoons corn flour
- Salt and freshly ground pepper
