CARPETBAG STEAK

- Make a deep cut in the side of each steak to form pockets. Grind pepper oyer the steaks and in the pockets.
- Mix the oysters with the lemon juice, then put 4 in each steak with the juice. Close up openings with skewers.
- Heat 50 grams butter in a heavy-based frying pan, add the steaks and cook quickly for 1 minute on both sides.
- Reduce the heat and cook gently for 15 to 20 minutes, turning twice. (Cook longer for well-done steak.)
- Place the steaks on serving plates and top each with 15 grams of butter and salt and freshly ground pepper.
- Serve with sauté potatoes and a mixed salad with French dressing.
