BAKED HAM AND PINEAPPLE PARCELS

- Cut 2 large heart shapes from non-stick parchment or greaseproof (waxed) paper. Fold and then open out.
- Butter one half of the shapes and place the steaks on this side. Spread each steak with mustard to taste, sprinkle with chives or spring onion (scallions).
- Top with the pineapple and the brown sugar mixture.
- Fold second side over and roll edges to seal well. Place the parcels on baking tray and cook in preheated hot oven (200°C/400°F, Gas Mark 6) for 30 minutes.
- Serve with jacket-baked potatoes and a Curly Endive and Apple Salad.
