Preparation Method :
- Heat half of the oil in a saucepan and add the onion, garlic, mustard seeds, chili flakes and red pepper. Fry for few minutes or until the onion begins to soften.
- Add the tomatoes and wine, bring to the boil. Cover and cook on low flame for 10-12 minutes. Transfer to a food processor and process until smooth. Adjust seasoning to taste.
- Place the prawns on a baking tray, brush with the remaining oil and cook under a preheated grill for 2 minutes or until cooked through.
- Serve the prawns with the sauce, top with the nuts and coriander.
INGREDIENTS
- 3 ripe tomatoes, skinned and chopped
- 1 red pepper, de-seeded and chopped
- 50 ml dry white wine
- 15-20 raw king prawns, defrosted if frozen, Shelled, remove the black intestine
- 1 tablespoon cooking oil
- 1 small onion, chopped
- 2 garlic cloves, crushed
- 30 grams unsalted cashew nuts, toasted and chopped
- 1 teaspoon black mustard seeds
- ½ teaspoon dried chili flakes
- 2 tablespoons chopped fresh coriander
- Salt and freshly ground black pepper, to taste
