Preparation Method :
- Add fish and sauce with the chopped vegetables; process until well combined.
- Toss tablespoons of fish mixture in combined sifted flour and turmeric; shape into patties. Place patties onto plate; refrigerate for 15 minutes.
- Heat oil in large frying pan; cook patties over medium heat for about 2 minutes on each side or until lightly browned. Remove from pan; drain on absorbent paper. Serve with sauce.
- Sweet chilli sauce: Stir the vinegar, sugar and chilli in small saucepan over medium heat until sugar is dissolved.
- Blend cornflour with the water; stir into vinegar mixture over medium heat, until the sauce boils and thickens. Remove from heat; stir in the chopped basil and coriander.
INGREDIENTS
- 500 grams boneless white fish fillets, chopped
- 1 carrot, grated
- 1 zucchini, grated
- 150 grams onions, chopped
- 2 cloves garlic, chopped
- 1 small fresh red chilli, chopped
- 120 grams plain flour
- 2 teaspoons grated fresh ginger
- 15 grams chopped fresh coriander
- 2 teaspoon grated lime rind
- Salt, to taste
- 1 tablespoon fish sauce
- 1 teaspoon ground turmeric
- 50 ml peanut oil
Sweet Chilli Sauce
- 100 ml white vinegar
- 2 tablespoons brown sugar
- 2 small fresh red chillies, chopped finely
- 15 grams chopped fresh basil
- 1 teaspoon corn flour
- 50 ml water
- 15 grams chopped fresh coriander
