Preparation Method :
- Mix the crabmeat with chilli, scallions, lime juice, salt and curry paste in a large mixing bowl.
- Put the skins in a pile and put a little crabmeat in the centre of the top skin.
- Brush the edges with a little water and roll up the edges to make a small cylinder-shaped package. Continue with the skins.
- Heat the oil in a wok and cook the packages, a few at a time, until golden brown. Drain on paper towels.
- Put all the ingredients for the dip in a small pan and heat gently until the sugar has dissolved. Serve warm with the crab packages.
INGREDIENTS
- 350 grams canned white crabmeat, drained
- 1 fresh red chili, seeded and chopped
- 4 scallions, sliced finely
- 1 tablespoon red curry paste
- Juice of ½ lime
- Salt, to taste
- 20 - 22 wonton skins
- Peanut oil for cooking
The Dip
- 2 tablespoon rice wine vinegar
- 2 tablespoon water
- 3 pieces preserved ginger, sliced
- 1 tablespoon ginger syrup from the jar
- 3 tablespoon superfine sugar
