BLACK EYE FISH HORS D'OEUVRE
The Black Eye Fish D’Oeuvre recipe is made of highly nutritional ingredients such as black eye peas, white fish, peeled prawns, onion, vinaigrette dressing, tomato, black pepper, and parsley. The dish can easily prepare for about forty minutes and can serve for eight people.

Preparation Method :
- Put the peas in a large bowl, cover with the water, then leave to soak overnight. Alternatively, pour over boiling water and soak for several hours.
- Transfer the peas and water to a pan and bring to the boil. Lower the heat, cover and simmer for 2 hours until the peas are tender, adding more water if necessary.
- Drain the peas and place in a bowl. Add the flaked fish and prawns and fold lightly to mix.
- Mix together the remaining ingredients, then fold into the pea and fish mixture. Leave to marinate for at least 1 hour.
- Turn into a serving dish, garnish with the prawns and parsley.
- Serve Cold.

- 200 grams black eye peas
- 1 liter water
- 500 grams white fish fillets cooked, skinned and flaked
- 250 grams tuna fish, drained and flaked
- 250 grams peeled prawns
- 2 small onion, peeled and grated
- 300 ml vinaigrette dressing
- Finely grated rind and juice of 1 lemon
- Dash of Tabasco
- 4 teaspoons tomato puree
- 4 tablespoons chopped parsley
- Salt
- Freshly ground black pepper
