VEGETABLE PAPAD ROLLS

Preparation Method :

  • Boil the carrot, potato, French beans and cauliflower with a pinch of salt till three- fourth cooked. Drain water and spread the vegetables out to dry.
  • Heat one tablespoon of oil in a pan and saute the tomato. Add the boiled vegetables and saute for a while. Add the turmeric powder and chilli powder and mix well.
  • Add the fresh coriander, remove from heat and set aside to cool.
  • Dip each papad in water so that it becomes pliable. Spoon a little mixture along the centre and roll the papad up like a dosa. Press the ends well to seal.
  • Heat sufficient oil in a kadai till it starts smoking. Deep-fry the papad rolls on both sides till crisp. Drain on absorbent paper.Serve hot.

INGREDIENTS

  • 10 medium urad papads
  • 2 medium carrot, chopped
  • 2 medium potato, chopped
  • 8 French beans, chopped
  • 150 grams cauliflower, chopped
  • 2 tomato, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 2 tablespoon chopped fresh coriander
  • Salt to taste
  • Cooking Oil for frying
