Preparation Method :
- Boil the carrot, potato, French beans and cauliflower with a pinch of salt till three- fourth cooked. Drain water and spread the vegetables out to dry.
- Heat one tablespoon of oil in a pan and saute the tomato. Add the boiled vegetables and saute for a while. Add the turmeric powder and chilli powder and mix well.
- Add the fresh coriander, remove from heat and set aside to cool.
- Dip each papad in water so that it becomes pliable. Spoon a little mixture along the centre and roll the papad up like a dosa. Press the ends well to seal.
- Heat sufficient oil in a kadai till it starts smoking. Deep-fry the papad rolls on both sides till crisp. Drain on absorbent paper.Serve hot.

- 10 medium urad papads
- 2 medium carrot, chopped
- 2 medium potato, chopped
- 8 French beans, chopped
- 150 grams cauliflower, chopped
- 2 tomato, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 2 tablespoon chopped fresh coriander
- Salt to taste
- Cooking Oil for frying
