MINI PORK KEBABS WITH SATAY SAUCE

Preparation Method :

  • Mix the onion, ginger, sugar, sambal, coriander, sauce, cumin and coconut cream in a bowl.
  • Place kebabs onto tray, spread with marinade; cover and refrigerate overnight. Grill the kebabs until golden brown and tender.
  • Serve with hot satay sauce.
  • Satay Sauce: Process the peanuts until finely chopped. Combine the peanuts with all the ingredients in saucepan; stir over medium heat, without boiling.

INGREDIENTS

  • 500 grams pork fillets, Sliced into long thin strips; thread onto skewer
  • 150 grams brown onion, grated
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon brown sugar
  • ½ teaspoon sambal djeroek (Chili paste)
  • 1 teaspoon ground coriander
  • 1 tablespoon light soy sauce
  • ½ teaspoon ground cumin
  • 2 tablespoons coconut cream
  • Salt, to taste

Satay Sauce

  • 100 grams roasted unsalted peanuts
  • 150 grams coconut cream
  • 2 teaspoon sambal oelek
  • 50 ml water
  • 1 tablespoon brown sugar
  • 1 tablespoon light soy sauce
  • 1 teaspoon chopped fresh lemon grass
