MINI PORK KEBABS WITH SATAY SAUCE

Preparation Method :
- Mix the onion, ginger, sugar, sambal, coriander, sauce, cumin and coconut cream in a bowl.
- Place kebabs onto tray, spread with marinade; cover and refrigerate overnight. Grill the kebabs until golden brown and tender.
- Serve with hot satay sauce.
- Satay Sauce: Process the peanuts until finely chopped. Combine the peanuts with all the ingredients in saucepan; stir over medium heat, without boiling.
INGREDIENTS
- 500 grams pork fillets, Sliced into long thin strips; thread onto skewer
- 150 grams brown onion, grated
- 1 tablespoon grated fresh ginger
- 1 tablespoon brown sugar
- ½ teaspoon sambal djeroek (Chili paste)
- 1 teaspoon ground coriander
- 1 tablespoon light soy sauce
- ½ teaspoon ground cumin
- 2 tablespoons coconut cream
- Salt, to taste
Satay Sauce
- 100 grams roasted unsalted peanuts
- 150 grams coconut cream
- 2 teaspoon sambal oelek
- 50 ml water
- 1 tablespoon brown sugar
- 1 tablespoon light soy sauce
- 1 teaspoon chopped fresh lemon grass
