Preparation Method :
- Preheat oven to 180°C / 350°F.
- To make crepes, sift flour and salt into a mixing bowl. Make a well in the centre and beat in the eggs and milk mixture, until smooth.
- Then stir in the brandy and melted butter. Cover and set aside for about 1 hour.
- Melt a little butter in a heavy frying pan over a medium heat and pour in enough batter to thinly coat surface of pan.
- Rotate the pan so that the batter covers the surface evenly. Cook for about 20 - 30 seconds or until tiny holes appear over the surface.
- Flip the crepe over and cook for 10 - 15 seconds. Transfer the crepe on to a plate and set aside. Continue with remaining batter.
- Cut the ham into strips. Divide ham between crepes and roll up.
- Arrange crepes side-by- side in a buttered baking dish, pour over the cream and season to taste with black pepper and grated nutmeg.
- Sprinkle with cheese, dot with butter and bake for 10 - 15 minutes or until golden.

- 100 grams grated Gruyere cheese
- 25 grams butter
