MINTED MELON APPETIZER

- Cut the melon in half and discard the seeds. Cut the flesh into 1 cm/1/2 inch cubes or scoop into balls; reserve the melon halves.
- Place the melon in a bowl with the strawberries and cucumber and a sprinkling of sea-salt.
- Mix the orange rind and juice with the chopped mint, then pour on to the salad and mix gently together.
- Shred the lettuce and use to line the melon shells. Spoon the salad on top, pouring in any orange juice from the bowl.
- Serve chilled as an appetizer, garnished with sprigs of mint.

- 4 inch piece cucumber, sliced and quartered
- Freshly ground sea-salt
- Finely grated rind and juice of
- 2 small orange
- 2 tablespoon chopped mint
- A few lettuce leaves
- 4 mint sprigs to garnish
